Ingredients:
1 block of extra-firm tofu
2 tablespoons Eclipse Marinade
½ cup white wine (for a lighter "chicken-style" flavor)
– or –
½ cup red wine or fruit juice (for a richer, "dark meat-style" flavor)
Optional: cornstarch or batter for deep frying
Recommended oil for frying: peanut oil
Instructions:
Double Freeze the Tofu
Place the tofu (in its package, with liquid) into the freezer. Freeze completely, then allow it to thaw fully in the refrigerator or at room temperature.
Once thawed, refreeze the tofu a second time, then thaw again.
This method transforms the texture, making it hearty and meat-like.
Press the Tofu
After the final thaw, remove the tofu from its packaging and press it for 20–30 minutes using a tofu press, cast iron skillet, or cutting boards with weight. This removes excess moisture and improves absorption.
Marinate
Slice the tofu into your desired shape or keep whole.
In a shallow dish or resealable bag, combine Eclipse Marinade with your choice of wine or juice.
Add tofu and coat evenly. Cover and marinate for at least 2 hours, turning occasionally for maximum flavor.
Cook Your Way
Air Fry or Bake: Cook at 375°F (190°C) for 15–20 minutes until golden and crisp.
Stir-Fry: Sauté in a hot skillet until browned on all sides.
Deep Fry (Optional): Lightly dust with cornstarch or dip in batter before frying in hot peanut oil until crispy.
